To celebrate the release of Carl Goes Kassel ahead of documenta 14, we spoke to Sascha Nicolai, the co-founder of craftBEE, which uses Kassel honey in its beers.

Who are you?

I’m Sascha Nicolai, the co-founder of craftBEE and Brewmaster of the Hütt-Brewery. I’m 38 years old, a husband and the father of two children.

Where do you call ‘home’ and what do you like about it?

My home is Nordhessen, where I love the landscape and the people.

Describe your favourite place to work.

My favourite place to work is the brewhouse with the cupper vessels.

Where do you find inspiration?

I find inspiration in every single new place I visit. As long as its outside in nature, I feel inspired. For my new brews, I often find inspiration during cooking sessions with friends and family, particularly through using spices.

What is your favourite type of transport and why?

I like to get around either on foot or by bicycle, because both are modes of transport you are directly connected with and are always a part of.

Describe a trend in your industry, or in society more generally, that fascinates you.

Craft beer is the new trend in my industry. I love collaborating with other brewers or working with new raw materials, such as with honey for our craftBEE brew, or with chilli for our stout ‘sufferhead’. New flavours always fascinate me.

Name your favourite spot to hang out when you’re off work.

Fulda Aue. It’s right in the city of Kassel but it’s a place where you feel like you’re on holiday. There’s not much noise, clean air and nature all around. It’s a good place to go to get a clear head when you are too busy.

Name and describe your favourite city.

Heidelberg, the city where I was born. You have to feel it to understand.

Name one object you cannot live without and tell us why.

A tasting class for beer, otherwise you can’t taste a good beer in the way it should be tasted.

What’s the most exciting thing you’ve got coming up this week?

The most exciting thing I have coming up this week is a craft beer tasting session with the artist Emeka Ogboh. It’s for the new beer I brewed for him for the documenta festival.
